I made some tests again, but I couldn't reproduce the problem. With the add-on MoreFunctionsForAddressBook, I changed the card category to "category1, category2" and the change was properly reproduced on the mobile device.
Do you have any BirdieSync options selected regarding address book categories ? (BirdieSync options/Address Book/Category) If yes, that will prevent you from synchronizing multiple categories since the address book name is stored in the category field.
