I realize the complexities of dealing with fields, but that said I would like to request the ability to defined Pocket Informant.

If there was a way to set this and then also define field mappings would be great .

Presently it is possible to synchronize contacts, appointments and tasks managed with Pocket Informant. But by now it is not possible to define a particular mapping for field synchronization. Maybe this feature will be available in the future. But it should be for fields managed in Pocket Outlook and shared with Pocket Informant.
