BirdieSync 3.0 has been released on the App Store, Google Play and BirdieSync web site. Note that it is still possible to synchronize with BirdieSync 2.x server with a 3.0 app (there is a switch in BirdieSync app settings to support BirdieSync 2.x).
This version has a lot of changes compared to version 2.x, bringing new features and more flexibility. But it may take some time to get used to the new way of configuring synchronization. BirdieSync will continue to evolve and see how to make this process easier.
Before synchronizing, as usual rule, ensure to have a recent backup. Should you have any questions, problems or suggestions, feel free to send a mail to info(at)birdiesync.com or support(at)birdiesync.com.

There is considerable complexity added to this new version--at least to the GUI. It took some tinkering, but it looks like I was able to do the simple sync of address book and calendar.

I never did find a decent alternative-other than to stop using TBird and I'm not sure I consider that a 'decent' alternative. Now that Birdiesync 3 is out of beta I've installed it. I can't say everything is good because it obviously needs a good tutorial. Way, way, more complicated than the old Birdiesync was. I retired from tech support & it's pretty obvious that this version isn't intended for home users. Maybe they can fork it to produce a simpler version in the future. Thanks for releasing. I have updated Thunderbird and BirdieSync.
I concur with other people's opinions that the interface is just too complicated. That was already the case in 2.x and even more in 3.0
You have to let some first time users look at the interface, listen to them, and be willing to rewrite your UI.

The new Interface is a lot more complex than the one in 2.x.
But imho this is what it have to be because a lot of the wishes from the last years are implemented now.
So, if you like a software with a lot of opinions, there have to be a lot to configurate.
Of course it would be nice if, in a future version there will be a "easy" and a "professional" interface like other software (for example fritz box) shows this.
Maybe Birdie can optimize the "Getting started" you see at firtst start and can reopen in BirdieSync>Help>Getting started
For me it was best to activate on calendar after the other and doing a sync after every activation. And the same for the contacts.

I'm aware that the new interface may seam more complicated and require some time to adapt to it. BirdieSync will continue to evolve in the future. There is already a user manual (you can have a look at menu Help/Help where you'll find various information) and a few configuration examples described in section Configuration/Examples. Should you have any questions regarding the configuration feel free to send a mail to support(at)birdiesync.com.
